first of all, install CWM and backup your mobile using it
Download root explorer and install it, open it and go to system > app> mount r/w > see the screeshot uploaded by AUNI (helpfull answer) and remove the apps that you want to remove from them keep that you want

Not beeing a total newbie, and think that even if i was i could have updated my phone to ICS just as easily!
I'm in Portugal and so i don't have the update available yet, but i decided to go ahead and update anyway. I have a Xperia Ray (operator free).
I haven't rooted the phone (yet!), and everything works perfectly so far! Camera, GPS, 3G, Wifi, no significant lags, etc. I'm testing the phone as it is for a few days, and then decide to root or not, mainly to remove all the bloatware.
I'm quite happy with this ICS "xperiance"!
If you need me to test something for you so you can make up your mind about upadting or not, i'll be happy to answer your questions.
